When uploads, downloads, iPods and iPads weren’t a thing yet, I used to have this Sony Walkman my mom bought me on my 18th birthday as my wealth for playlist. Owning that thing before was as ecstatic as you first own a latest iPad model today. You felt like you owned the most coveted thing this world has ever fashioned. 

A cassette tape only has at the most 18 tracks, all of Side A and Side B. I also have to wary about battery usage. I roll a pen at the cassette tape hole instead of pressing forward and reverse to get to the song I wanted a replay. Now, I couldn’t help but smile at my 90s self, so much effort.

The controversial Kadayawan 2014 Invasion Party video

This is kind of late post, but for the sake of online archive I just have to post a short video of that controversial Kadayawan 2014 Invasion Party. Not a video though on the Ramon Bautista ‘Hipon’ contentious remark but just a short vid of what went along the ground before that incident. That issue actually is now water under the bridge, both Mayor and Ramon has gotten goodwill. 

Spectrum, the main producer of the party brought in the best DJs in the country to rave in the most spectacular light show and electronic music on the occasion. I’m in no age actually to party hard, but thanks to Smart Communications for bringing us in here, free. It was real fun. I wish I had one DJ friend who can make music out of the box, it was awesome. Anyway, since there’s none maybe I can just work with my neighbor’s awesome talent to party with string instruments on stage and rave in daylight. This dish is my personal favorite.  I love stuffed food, they’re effortless to eat. Wala ka ng himayin. What more if it’s a stuffed chicken with yet again another atypical sauce that comes with it - the  Mangosteen Sauce. 

August is the season of this fruit and they’re all over hanging the wayside of the city. I think the Chefs are making the most out of the local produce and they’ve come up with this sweet and tarty royal sauce. I really like it to the moon and back. It’s really delicious. I should come back for this. Promise!

There has been countless of recipes listed that incorporate what Davao is famous for, Durian. And let’s list this Baby Back Ribs as one of them. We have tried Mangosteen sauce in a stuffed chicken, this time a Durian sauce on top of a barbequed baby back ribs. So you ask, how does it taste?

I think the sweet section in my tongue map is the widest, lol, that’s why I like it a lot. It’s generally on the sweet side, both sauces are sweet actually that’s why it draws me. But I’ll leave the comment section below for your review. I would love to read what's your tongue's take on this.

It may look like your typical lumpia, but Vikings’ had it leveled up. I love the hint of smoked fish and the sweet Mangga in it. The flavor in general is more on the sweet side so it suits me well. The garlic and or spicy vinegar dip best compliment the taste. Recommended!

To be honest, I’m not really a Talong (eggplant) person, yeah, shame on me. Blame it to the saggy texture of the eggplant meat. But I know many of you out there who are health conscious and or simply grew up in your mama’s kitchen have this dish from time to time on your table. Yes, it’s your usual ensaladang talong but with a Malunggay Pesto twist on the side. Isn’t it an interesting add-on to your usual talong? The healthiest bend your familiar ensaladang talong can ever have. Scoop a spoonful or two.

There’s another way to eat your classic street balot out of the shell. That is to grab a bite or two of this thinly sliced bread topped with ground balot fused with an assortment of herbs and spices in it. The balot smell in the paste has mellowed and I must say this dish is a conclusive example of food amalgamation of the high and the low. Balot leveled up!

Oh, for the love of crackling pork. If you’re craving for a crackling comfort, this all-time Ilocos favorite is an answer to that. Vikings’ version is full and flavorful. Dig in!

Yet again another timeless Filipino favorite, kinilaw. Other than this is served with only the freshest catch from the seas of Davao, Vikings has enhanced it as you can see, adding Davao’s famous Suha and seagrasses in it. The mixture of spices, seasonings and notable zings in it went perfectly blended  transcending the classic. A must pick!

This is my second favorite. Baby Back Ribs glazed to taste perfection. It’s tender and juicy; it will keep you nibbling the bone down to its last essence. You shouldn’t miss this dish for the world.

Root Beer Cajun Steak
The steak is marinated in root beer and in some other spices and herbs to lock in the flavor. And however you want your steak done, don’t forget to have an extra sauce for it. The root beer made it sweet, Cajun made it spicy, some other spices and herbs added in it made it perfectly savory. I got two helpings, ohhh; forget about the diet, Fourth of July happens only once a year, indulge and celebrate!

And then the desserts … something I always look forward to every meal.

New York Cheesecake
God, I just died and went to Cheesecake heaven after bolting a piece of this bliss. This is the bomb. It evaporates in your mouth with the dreamy flavor still trailing after. It’s so addictive; you wouldn’t know you’re asking for more. You should grab a jigger or two or three or more of this Cheesecake on the Fourth. Trust me, it’s so good. This perfectly blended, decadent creation is made with love by Chef Anton Abad.
